Hey y’all so it has been a busy last few weeks! Scarlett has been doing really well in all areas of child development despite not being able to see most of her therapist face to face.
We have been working with Early Childhood Intervention (ECI) since we brought Scarlett home from the hospital. In today’s video, our scheduled OT session didn’t go as planned but I still worked with Scarlett on some of her OT goals. This is something we do pretty regularly in order to help her meet her goals and improve her fine motor skills. We are so thankful for ECI and all they have done to help my little one reach developmental goals that are age-appropriate, despite her being born prematurely. I hope you all find it both inspirational and encouraging. And if you think you’re child may need a little help meeting developmental goals I highly recommend reaching out to your local ECI program for guidance.
In today’s video I also give a little update on how I’m doing on WW & what I have been doing along side watching what I eat.

Chicken Taco Soup Recipe:
2 Pounds Chicken Breast
1 packet of Ranch Seasoning
1 packet Taco Seasoning
1 can yellow Corn
1 can Black Beans
1 can Pinto Beans
1 can Rotel
1 yellow squash (chopped)
1 zucchini squash (chopped)
2 cups of chicken broth
1. Add chicken breast, ranch seasoning, taco seasoning, yellow corn, black beans, pinto beans, rotel and chicken broth to crock pot
2. Cook for 4-6 on high or until chicken is cooked all the way
3. Remove chicken from crock pot & shred and put back into the crock pot
4. Add Squash & Zucchini into the crock pot and cook until tender
5. Serve & enjoy!!
